Mexican Mole

A Chocolatey Treat!

When I was in Mexico City in Fall 2024, not only did I experience some of the best foods I’ve ever tried, but I also had my usual obsessive habits over a single food item — this time around being Mole.

But not just any mole.

See, mole just means sauce. Plain and simple. One Mole you’ve all probably tried is Avocado Sauce, or Guacamole. So if you invited me to a dinner party, odds are I’d bring myself and guacamole. Maybe some olive oil lol.

Something else you may not know about me is I’ve been consistently consuming dark chocolate since about 11 years old. Over 15 years of Dark Chocolate, I’ve developed a fanatic sense on good vs bad chocolate but on top of that just a true a deep passion for chocolate.

Similar to how olive oil comes from olives, chocolate comes from cacao pods (with some additional fermentation). One of my big goals of 2025 was to visit a Cacao Farm — which I had revealed in a previous blog has already been crossed off the list.

Chocolate comes from Cacao. You can break it down into Cacao + Sugar + Other ingredients. My question to you is what % of total imported cacao is used in sweet dishes vs savory dishes? Cacao and savory is found few and far between. The rarity of the combination (I think) leads me to appreciate Mexican Mole so much.

I get my favorite food represented in a completely different light. The thing is, many people misconstrue mole as merely “chocolate sauce.” The reality is, cacao is one of 33 ingredients (at least in the mole I filmed). The flavors of mole run so deep, and while there is a chocolately sensation, it feels quite exotic and unfamiliar to me.

Quick Tip - if you like spicy, Oaxacan Mole has a spicier tendency than Mole Poblano from Mexico City

No surprises to me, I had a bit too much fun at the shoot and had a bit too much mole. I was stuffed! No regrets though.

It was amazing to witness a chef who has made his Grandmother’s recipe of mole for 30 year. It’s true art.

Next time you’re at a Mexican Restaurant (not Chipotle), try some Mole. You won’t regret it.
